A light lunch in the Time of Corona. Takes a bit of time, but then, if you are in isolation that gives you an excuse to engage with your food as we should. This is for one person.

1 beetroot
2 potatoes
3 garlic cloves
a bit of good quality oil
salt & pepper

Peel the beetroot, and divide it and the potatoes into wedges. Place in a lightly oiled owen tray with the whole galic cloves. Drizzle with salt and pepper. Bake for 30 minutes in 200°C. 

While baking, heat a pan and lightly roast
a handful of sunflower seeds
a handful of green pumpkin seeds
some walnuts

For fresh and delightful salad shred and knead
a quarter of red or white fresh cabbage, mix with
apple or white wine vinegar
salt
olive virgin oil
Drizzle with some of the seed and nut mix, and use the rest for the beet and potato wedges

Then, fry slices of 
100 gr of halloumi

Arrange and enjoy!
